Grandma Rose’s Carrot Bread

Flavorful quick bread from our Grandma Rose.

Preheat oven to 350 degrees

Grease 2 loaf pans or sometimes we do 3 smaller foil pans.

INGREDIENTS:

3 eggs

1 ½ cup oil

2 cups sugar 

2tsp vanilla

½ cup crushed pineapple

3 cups flour

1tsp salt

1 tsp baking soda

1/2 tsp baking powder

2 cups raw grated carrots

3 tsp cinnamon

DIRECTIONS:

Beat eggs, oil, and sugar until smooth. Add vanilla. Sift flour, cinnamon, salt, soda, baking powder and grated carrots. Add dry ingredients to eggs. Mix until blended. Do not over mix. Bake 350 oven for 1 hour or until done. Makes 2 large loaves or 3 small foil pans.
