Jody’s Prime Rib

Jody has been serving up her family’s DeBruycker Charolais prime rib for a lot of people over the years.

4 pound Prime Rib

1 whole garlic clove

Olive Oil

Heat oven to 500-550 degrees ( it must be a very, very hot oven!)

 Rub the olive oil over the roast. Poke the garlic cloves into the roast all over. And then cover the roast in seasoning. 

·      Cook the Prime Rib in the really hot oven for 20-30 minutes so the outside is completely seared and has a crust.  

·      Turn the oven off and leave the roast in the oven, wait at least 2 hours before checking. The time can vary on the size of the roast. It is important to make sure the heat stays in the oven to slow cook the roast. This does work best in a well-insulated oven. 

·      When it’s time to open oven, check the temperature of the roast with meat thermometer, it should be about 130 degrees. 

Jody serves DeBruycker Charolais Prime Rib with a mushroom sauce. 

·      Slice 1 pound of mushrooms sliced ½ thick 

·       1 large onion diced 

·      2 cloves fresh garlic minced (or to taste)

·      4 Tablespoons butter

·      1 tablespoon Olive Oil

·      After you sautee the mushrooms, garlic and onions, sprinkle in half a tablespoon of flour 

·      Slowly add ½ cup cream and some drippings from the Prime Rib
