Shepherd’s Pie

This is a great dish cooked and served in a cast iron pan. Sometimes called Cottage Pie- a quick, flavorful comfort food.

INGREDIENTS:

·       1 tbsp olive oil

·        1 1/4 lb DeBruycker Charolais ground beef 

·       1/2 tsp salt or to taste

·        1/2 tsp pepper or to taste

·        1 large onion chopped

·        1 clove garlic minced

·        1/2 tsp red pepper flakes (optional) 

·       1-2 tablespoons of flour

·        2 tbsp Worcestershire sauce. 

·       1.9 oz onion soup mix 

·        1 cup  low sodium beef broth

·        2 cups fresh diced veggies suggestIons: carrots, peas, corn and green beans (can use frozen if you like)

MASHED POTATOES: or make them the way you normally do.

  •       6 medium- large potatoes peeled and cut into cubes

  •     4 tbsp butter softened

  •       2/3 cup milk

  •       1/2 tsp salt or to taste

  •      1/2 tsp  pepper or to taste

  •      1 tsp garlic powder

DIRECTIONS:

Start by boiling the potatoes to make the mashed potatoes- the above recipe is a suggestion, otherwise make the mashed potatoes the way you like. 

While the potatoes are cooking prepare the meat. Heat oil in skillet over medium heat, add ground beef and season with salt, pepper – to your taste. Add onion and garlic, cook for a bit, add pepper flacks (optional). Cook,  sprinkle 1-2 tablespoons of flour. Immediately add Worcestershire sauce, onion soup mix, beef broth and stir. Add vegetables of choice, cook and stir until it begins to thicken. Adjust as needed.

If you are using cast iron skillet, just spread prepared mashed potatoes over meat mixture, cover with foil and re-heat in oven for up to 20 minutes or until the meat sauce bubbles. Take the foil off and sprinkle a cheese of your choice over the mashed potatoes, heat until melted. Cool for just a bit before serving. 

***If you are not using cast iron skillet, spread meat mixture in 9x13 pan and follow above directions
